Q: Seems to work, but both the power led and signal out led are red, not green. is this a new revision or do i have something hooked up wrong?

Mine are red, too. And they work just fine. No, I don't think you have anything hooked up wrong.

Q: I am looking for a sensor that can be hidden under a plastic surface, would this be able to detect though a sheet of acrylic?

Not sure about a clear sheet. I thought I had a piece and I would give it a try but I did not. I did have a sheet of anti-glare and it did set it off so that material clarity will definitely not work.

Q: do this only do digital reading and not analog value?

Yes. Its only digital. There are similar devices with analog interfaces such as a QRE1113.
