Impossible to find locally during deer season, I think this is the best spice blend for deer breakfast sausage. I blend the spice as recommended with three parts venison and one part smoked pork jowls.

I've used other products that seem over seasoned if you follow the recommended ratio, so I was a little light on the amount of seasoning per pound when I made my sausage... If I had followed their ratio, the sausage would have been perfect! Next time I'll do it right!!!

I am very new to sausage making and was reluctant to buy pre-made spices rather than mixing my own. My brother is a veteran sausage maker and suggested the Legg brand. I had some questions about the spice packet (whether a binder was added) Very speedy response from their CSR and more suggestions that were helpful. The resulting smoked sausage is amazing, great flavor, chew and texture. Will buy this again and will try other varieties.

I look for good flavor and try the seasoning solo without water or anything else first. In my opinion, its 80% salt and salty things and some dried green stuff in it for flavor which does not shine through. This is my 3rd try with this company of all different flavors and i would honestly save your cash, and invest it on one that can nail what your looking for. Meats expensive and there is a lot of time involved. After the taste test, this went in the garbage for me. Its cheaper to throw away the seasoning then the meat, casings and time. im sure no meat locker wants this product. Sorry A.C. Legg, but your not sorry you took my cash 3 strikes, your out!
